William, DiPaola, president of The Lime Truck, shares a look at his career, his achievements and industry trends ahead of his appearance at Restaurant Franchising & Innovation Summit 2025.

Today we’re shining a spotlight on William DiPaola, president of The Lime Truck. DiPaola will be a speaker at the upcoming Restaurant Franchising & Innovation Summit, which takes place on March 11-13, 2025, in Myrtle Beach, South Carolina. He will be the moderator on a breakout session titled “Fueling Growth: Strategies for Securing Capital and Expanding Your Business.”

Describe your current role.

William J. DiPaola is a seasoned leader in the restaurant and franchising industry with over three decades of experience in operations, franchise development and executive management. Known for his passion for empowering first-generation entrepreneurs and fostering business ownership, William’s career has been defined by his ability to scale brands, optimize unit-level economics, and build strong, motivated teams.

Currently serving as the President of The Lime Truck, William has been instrumental in preparing the brand for franchising, set to launch in 2024. Under his leadership, The Lime Truck has expanded its catering services, optimized operational processes and focused on creating franchise opportunities for traditionally underserved communities. In addition to his role as president, William has taken on responsibilities as Interim HR director, implementing systems to streamline hiring, onboarding and training processes.

What is one career achievement you’re most proud of?

Helping a person I mentored become their own business owner and have them get featured on “Diners, Drive-Ins and Dives.”

What advice would you give to someone just starting out in your industry?

You can compromise on your ideas as to how you may do something, but NEVER compromise on your IDEALS as to WHY you do what you do. Ever.

If you weren’t working in your current field, what would you be doing instead?

Musicals.

Are you involved in any charitable organizations that you would like to tell people about?

I play an active role in the Career Immersion Leadership Institute (CILI), an organization dedicated to nurturing the next generation of leaders in the hospitality and franchising industries. I leverage my experience to mentor and guide participants, providing invaluable insights into franchise development, operational excellence and strategic growth. I share my passion for empowering entrepreneurs, fostering professional development, and promoting diversity within the industry. My commitment to CILI reflects my dedication to building a pipeline of talented, future-focused leaders who will shape the industry for years to come.
